Foodie Friday: Mashed Garlic Cauliflower

I know, I know, mashed cauliflower has been a 'thing' for quite some time now. But, I'm a potato girl so I just got around to trying it the other night when I needed to use our cauliflower but didn't have time to roast it. Ohhh emmm gee... it was Heavenly. You must try it... now! 

Ingredients:

  • 1 cauliflower head
  • 3 garlic cloves
  • 2 Tbsp. olive oil or butter
  • salt & pepper to taste (optional)

Directions:

  1. Cut cauliflower stems off and cut florets into 1-2inch chunks.
  2. Boil cauliflower & garlic cloves on medium heat for 12 minutes.
  3. Drain all water.
  4. Place in food processor with oil or butter, salt & pepper.
  5. Puree until desired consistency is accomplished.

Foodie Friday: Leek and Mushroom Fettuccine with Corn & Feta

I love pasta and am always up for a quick and easy, yet tasty pasta dish that the kids like too. This has become a favorite in the our family, it's such an easy go to meal hence the paper plate. This is real life y'all and sometimes this mama wants a simple dinner from dishes to food! 

I'm also a salty gal so I add a bit of extra salt and a few squirts of lemon juice to top it off... delish! 

Ingredients: 

  • 8ozs fettuccine noodles
  • 2 Tbsp. butter
  • 2 leeks, white and green parts only, thin slices
  • 8ozs. white mushrooms - cleaned and chopped
  • 1c. corn
  • 2 tsp. minced garlic
  • 1/2 tsp. dried thyme
  • 1 Tbsp. dried parsley
  • salt and pepper to taste
  • 2 Tbsp. olive oil
  • 1 c. crumbled feta

Directions:

  1. Cook fettuccine according to package directions and drain.
  2. While pasta cooks, heat butter in skillet over medium heat.
  3. Add leeks and cook until tender, 3-4 minutes.
  4. Add mushrooms and cook until tender, 3-4 minutes.
  5. Stir in corn, garlic and seasonings and continue to cook for 5 minutes.
  6. Once pasta is done, drain and toss in olive oil and other ingredients, including feta.

Foodie Friday: Spicy Paleo Sweet Potato Chili

I cannot begin to tell you just how delicious this recipe is. Let me  just say that I was so busy enjoying the warm intense flavor that I forgot to take a picture for y'all until it was practically all gone. Don't let the picture fool you, it is a hearty dish that easily feeds 6 people.  Even if someone in your family isn't a sweet potato lover, like my husband for instance, go ahead and give it a try. Even he loved it! The sweet potato flavor is actually very faint but the mixture of all the flavors is intense my friends, you don't want to pass this one by! 

Ingredients:

  • 2lbs ground beef
  • 1 red onion - diced
  • 1 tsp. minced garlic
  • 1- 29.5 oz. can tomato sauce
  • 2c. petitie diced tomatoes w/ juice
  • 3c. beef stock
  • 1c. or approx. 3 large carrots 
  • 5 small sweet potatoes - peeled and cubed
  • 2 bay leaves
  • 1/2 tsp. thyme
  • 2 tsp. salt
  • 1 1/2 tsp. black pepper
  • 1/2c. chili powder
  • dash of oregano
  • dash of red pepper flakes ((optional))

Directions:

  1. In a large saucepan, brown beef, onions and garlic. 
  2. Drain once beef is cooked thoroughly and onions are tender.
  3. Pour into crock pot with remaining ingredients.
  4. Simmer all day on low for 8 hours or on high for 5 hours.
