Lunch seems to be the most difficult meal for me to prepare these days because I don't want to cook a gourmet dinner midday but I want to make sure A & S eat a well balanced and filling meal. This egg salad is just that. It's simple, quick, delicious and has very few ingredients. It's a great choice for lunch or dinner! I actually tripled the recipe and froze the leftovers and it's just as delicious once it's been thawed out.
- 2 hard boiled eggs- peeled & crushed
- 1/2 tsp. mustard
- 1 tsp. plain Greek yogurt
- Half an avocado- sliced
- Salt and pepper to taste
- Mix together eggs, mustard and yogurt. Salt and pepper to taste, if you'd like.
- Spread on bread and add sliced avocado.
