Foodie Friday: Simple Egg Salad Sandwich for the Littles

Lunch seems to be the most difficult meal for me to prepare these days because I don't want to cook a gourmet dinner midday but I want to make sure A & S eat a well balanced and filling meal. This egg salad is just that. It's simple, quick, delicious and has very few ingredients. It's a great choice for lunch or dinner! I actually tripled the recipe and froze the leftovers and it's just as delicious once it's been thawed out.

Ingredients:

  • 2 hard boiled eggs- peeled & crushed
  • 1/2 tsp. mustard
  • 1 tsp. plain Greek yogurt
  • Half an avocado- sliced
  • Salt and pepper to taste

Directions:

  1. Mix together eggs, mustard and yogurt. Salt and pepper to taste, if you'd like.
  2. Spread on bread and add sliced avocado.

Foodie Friday: Chimichangas for the Littles

If you're looking for an easy and delicious meal for your little ones, today is your lucky day. A & S LOVE these chimichangas and they can easily be altered with other ingredients. I am looking forward to making all sorts of varieties because they are that easy! As with most of the other recipes I post, these are very easy to freeze and reheat. I had quite a bit of the filling leftover and have frozen it too and will be using it to make more soon.

Ingredients: 

  • 10 tortillas
  • 1 can refried black beans
  • 1 can of fat-free refried beans
  • 6ozs of mild salsa ((I use Newman's Own))
  • Cheese ((your choice))
  • 2 egg whites
  • 2 Tbsp. olive oil

Directions:

  1. Preheat oven to 350°
  2. Whisk egg whites in a small bowl.
  3. Mix both refried beans and salsa in a medium bowl.
  4. Spread bean mixture on tortilla and sprinkle with cheese.
  5. Fold tortilla in half and brush with egg white.
  6. Continue folding in edges and brushing with egg white to seal all ends.
  7. Put 1 to 2Tbsp. of olive oil in a pan over medium-high heat.
  8. Once pan is hot, place chimichangas in pan and cook for approx. 1 minute or until golden brown on each side.
  9. Place on cookie sheet lined with foil & bake for 15 minutes.
