Foodie Friday: Cauliflower Pizza Base

I know, you're probably thinking there's no way a cauliflower pizza base can be a tasty substitute for pizza crust. Well, you're oh so wrong. It has so much flavor that you'll be wanting to bake pizza as often as possible. It's not crunchy so a fork is needed but totally worth it.

Ingredients:

  • 4 cups or 1 lg head of cauliflower- riced
  • 4 eggs- lightly beaten
  • 4 cups of your favorite cheese- shredded 
  • 4 tsp dried oregano
  • 2 tsp minced garlic
  • 1/4 tsp salt

Directions:

  1. Preheat oven to 430°. Cover 2 pizza trays with baking paper and set aside.
  2. To rice cauliflower, chop and place half of cauliflower into a food processor and pulse 10 times or until finely riced. Repeat with the other half.
  3. Place in a lidded microwavable dish and microwave for 10 minutes.
  4. In a large bowl, mix cauliflower, egg & cheese. Then add oregano, garlic and salt.
  5. Divide mixture between the 2 trays and spread into a round shape.
  6. Bake for 20 minutes or until golden. Add your favorite pizza toppings and return to oven until cheese is melted. 

I love topping ours with marinara sauce, pesto sauce, baby spinach, sliced mushrooms, and fresh parmesan cheese. So delicious!

Foodie Friday: Kale Pineapple Pizza for the Littles

It's Sunday but in keeping with the spirit I'm going to stick with the "Foodie Friday" title. This is a super simple recipe but one that A & S and even my husband loved. I'm a meat, cheese and sauce kind of person so I didn't give it a try but if my husband approves it must be delicious!

Ingredients:

  • Thin pizza crust
  • Pizza sauce
  • Kale
  • Canadian bacon
  • Pineapple
  • Cheese ((I used cheddar but I'll use feta next time for added flavor))

Directions:

  1. Preheat oven to 350°
  2. Place pizza crust on pizza tray or cookie sheet
  3. Spread pizza sauce over pizza crust
  4. Layer cooked kale, canadian bacon, pineapple and sprinkle with cheese.
  5. Bake for 12-15 minutes or until cheese is melted.
