Foodie Friday: Roasted Honey Cinnamon Sweet Potatoes

I'm always looking for a tasty vegetable side dish, especially one that includes sweet potatoes but doesn't take forever to cook. This is a fabulous recipe for fall and winter and was a hit with the kiddos as well, which is always a plus in my mind. 

Ingredients:

  • 4 sweet potatoes - peeled & cut into 1 in. cubes
  • 1/4c. extra virgin olive oil
  • 1/4c. honey
  • 2 tsp. ground cinnamon
  • Salt & pepper to taste

Directions:

  1. Preheat oven to 375°
  2. Lay sweet potatoes in a single layer on a foil lined cookie sheet.
  3. Drizzle with oil. honey, cinnamon, salt and pepper and toss.
  4. Roast for 25-30 minutes.
