I'm always looking for a tasty vegetable side dish, especially one that includes sweet potatoes but doesn't take forever to cook. This is a fabulous recipe for fall and winter and was a hit with the kiddos as well, which is always a plus in my mind.
- 4 sweet potatoes - peeled & cut into 1 in. cubes
- 1/4c. extra virgin olive oil
- 1/4c. honey
- 2 tsp. ground cinnamon
- Salt & pepper to taste
- Preheat oven to 375°
- Lay sweet potatoes in a single layer on a foil lined cookie sheet.
- Drizzle with oil. honey, cinnamon, salt and pepper and toss.
- Roast for 25-30 minutes.
