Foodie Friday: Simple Egg Salad Sandwich for the Littles

Lunch seems to be the most difficult meal for me to prepare these days because I don't want to cook a gourmet dinner midday but I want to make sure A & S eat a well balanced and filling meal. This egg salad is just that. It's simple, quick, delicious and has very few ingredients. It's a great choice for lunch or dinner! I actually tripled the recipe and froze the leftovers and it's just as delicious once it's been thawed out.

Ingredients:

  • 2 hard boiled eggs- peeled & crushed
  • 1/2 tsp. mustard
  • 1 tsp. plain Greek yogurt
  • Half an avocado- sliced
  • Salt and pepper to taste

Directions:

  1. Mix together eggs, mustard and yogurt. Salt and pepper to taste, if you'd like.
  2. Spread on bread and add sliced avocado.
