Foodie Friday: Summer Veggie Fry

Looking for a quick and delicious meal to take to a cookout or simply enjoy at home? Here is the perfect recipe! It's also quite versatile, you can add or replace ingredients with your favorite vegetables of choice. When doing so, just remember to add the firm veggies first in order for them to cook throughly.

Ingredients:

  • Olive oil
  • 3 medium potatoes
  • 2 zucchini
  • 1/2 c. onions
  • 1/2 c. mushrooms
  • 1 clove garlic - minced
  • 14 ozs. smoked sausage

Directions:

  1. Wash and chop all veggies.
  2. Begin by adding the potatoes to a heated skillet, then drizzle with olive oil and salt and pepper to taste. Cook potatoes for approx. 12 minutes over medium-high heat.
  3. Add zucchini, onions, mushrooms and garlic and drizzle with more olive oil. Cook for approx. 10 minutes or until all veggies are slightly tender.
  4. Add smoked sausage and cook until warm.
